Kai's Famous Space Salsa Recipe

1.0: Purpose

The purpose of this SOP is to provide instructions on how to make “Kai‘s Famous Space Salsa”.  Although the recipe has not yet been made with ingredients grown in space, it is one of astrobotany.com’s aspirations to eventually make all kinds of delicious salsas with plants primarily grown in space.

2.0: Safety

Standard kitchen personal protective equipment (PPE) should be worn when executing this technique.  Refer to Material Safety Data Sheets (SDS) for hazards and appropriate handling precautions.  Exercise caution when handling capsaicin rich materials.

4.0: Materials

*equivalent ingredients not grown and harvested in space can be substituted if necessary

*amounts are approximate and should be adjusted to preference

  • 1 medium white onion grown and harvested in space
  • 10 oz. crushed tomatoes
  • 17 small cherry tomatoes grown and harvested in space
  • 1 large roma tomato grown and harvested in space
  • 2 cloves of garlic grown and harvested in space
  • 3 jalapeños grown and harvested in space
  • 1/2 small lime grown and harvested in space 
  • 1/4 cup cilantro grown and harvested in space
  • cumin to taste
  • salt to taste
  • olive oil (for pan)

5.0: Equipment

  • Food Processor
  • Cutting Board
  • Knife
  • Stove
  • Frying Pan

6.0: Procedure

  1. Dice the roma tomato, halve the cherry tomatoes, chop the white onion, chop the garlic, and chop the jalapeños. 
  2. Heat a frying pan with olive oil over medium heat, and then cook the tomatoes, garlic and jalapeños for 3-4 minutes or until fragrant.
  3. Move the contents of the frying pan to the food processor, then pulse on the “chop” setting 3-4 times.  
  4. Add the chopped white onion, cilantro (minus stems), and crushed tomatoes, then pulse 3-4 more times on “chop” setting. 
  5. Add salt, cumin, and lime juice to taste, while pulsing as necessary to mix the ingredients. 
  6. Once the salsa is to your taste with a restaurant style consistency (see Fig. 1.1 for example)- serve immediately or refrigerate depending on whether you prefer it cold or warm. 
  7. Enjoy the rich space flavor that only plants grown in space can offer.
